Almond Marzipan

If you are addicted to marzipans, you have to try this almond marzipan; it is sweet, soft, and very easy to prepare. A burst of flavors for your palate. You won't regret it!

2 cups almonds, toasted
1/3 cups water
1 cup sugar
1 teaspoon vanilla essence
1 egg white
1/4 cups icing sugar

Blend the almonds in a processor until you obtain a fine powder.
Heat the water over medium heat, add the sugar, and cook on low heat until a syrup forms.
Add the cream of tartar, almond powder, and orange essence, mix and incorporate the egg white. Cook on low heat for 5 minutes.
Place the mixture in a bowl and add the powdered sugar. Mix until you get a dough.
On a board with wax paper, place the mixture and flatten it with a rolling pin.
With a small ring, cut out circles and refrigerate for 15 minutes. Remove the excess marzipan.
Serve your marzipans and enjoy.
