Amaranth, Almond, and Sesame Seed Candies

This recipe is for a traditionally Mexican sweet that reminds us of traditional pepitorias. It is the favorite treat for both kids and adults; we gave it a twist by adding amaranth, almonds, and sesame seeds. You won't be able to resist the temptation to make these amaranth, almond, and sesame seed candies to delight everyone at home.

  • 1 package obleas, colored
  • 250 grams sugar
  • 100 milliliters water
  • 50 grams amaranth
  • 50 grams almonds, sliced and toasted
  • 50 grams toasted sesame seeds

  • Place the sugar in a pan, cover with water making sure it doesn't splash, put it on the heat and evaporate the water over medium heat to form the copper-colored caramel, without stirring at all, or it will crystallize.
  • Take one wafer and with a fork, add a bit of caramel to stick another wafer on top.
  • Once two wafers are joined, dip the edge in sugar and coat with amaranth, almond, or sesame seeds.
