  • 2 tablespoons cherry syrup , for the sponge cake
  • 1/2 cups maraschino cherry, in small cubes, for the sponge cake
  • 1/2 cups nut , finely chopped, for the sponge cake
  • 1 cup cream cheese, for the frosting
  • 1 1/2 cups whipping cream
  • 1/2 cups cherry syrup
  • 1/4 cups icing sugar
  • 1/2 cups maraschino cherry, in half, for filling
  • 3/4 cups nut , finely chopped, for filling

  • Beat the egg and sugar until it doubles in size. Gradually add the oil and once integrated, slowly pour in the milk while continuing to beat. Finally, incorporate the flour, baking powder, yeast, and cherry syrup. Keep beating until well combined.
  • Pour the mixture into a previously greased round mold and bake at 180 °C for 40 minutes or until well cooked. Unmold and let cool.
  • For the frosting: beat the cream cheese and add the whipping cream and syrup. Incorporate the powdered sugar and mix.
  • Cut the cake in half, fill with a bit of frosting, and add some cherries and walnuts. Place the other layer of cake, cover with the remaining frosting, and decorate with cherries and walnuts.
