Animal Cookies

Prepare these super cute animal cookies and decorate them with the kids on a holiday afternoon. Use animal-shaped cookie cutters and unleash your creativity to decorate them. Use pastel colors to make them for Easter, or prepare them to give.

  • 1 cup unsalted butter, at room temperature (240 grams)
  • 1 1/2 cups sugar, (300 grams)
  • 1 egg
  • 1 1/2 teaspoons vanilla essence
  • 2 3/4 cups flour, (330 grams)
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 4 egg whites, for the icing
  • 5 cups icing sugar, for the icing

  • Preheat the oven to 400 F (200 degrees)
  • In a mixing bowl, blend the softened butter with the sugar until you have a light, creamy, and fluffy consistency.
  • Add the egg and vanilla extract and stir.
  • Mix the flour, baking powder, and salt. Gradually add to the butter mixture, beating well each time you add it.
  • Divide the mixture into two balls.
  • On a floured flat surface, knead until you have a dough about 5 mm thick.
  • Dust the cookie cutters with flour and cut out the desired cookies.
  • Place the cookies on an ungreased baking sheet and bake for 6-7 minutes (or until slightly golden).
  • For the Royal Icing: In a mixer, beat the egg whites until frothy.
  • Add the powdered sugar and mix until well combined.
  • Divide the frosting among bowls to add the food colorings you wish to use.
  • Add drops of food coloring to the different bowls of frosting and mix well. (Be careful as food colorants can stain quickly, add drop by drop).
  • Put the colored frosting in a piping bag with a small round tip and first outline the cookies. Then fill in the center of the cookie. You will see that the frosting spreads and becomes smooth. (If it is too thick, you can add 1/2 teaspoon of water)
  • To decorate edges or other highlighted elements, you can thicken the frosting by adding powdered sugar. You can place this frosting in another piping bag with a finer tip to make details. (like the chicken's beak)
  • Let them dry completely and then make lines with the thicker frosting and add colored sugar on top to give the cookies texture.
