Apple and Raisin Cake

This apple cake is delicious and with the apricot glaze it looks very pretty. It is perfect to treat everyone at home as its flavor will win them over.

  • 60 grams raisins
  • 3 tablespoons rum , dark
  • 1 cup flour
  • 1 teaspoon baking powder
  • 115 grams unsalted butter , soft
  • 1 cup powdered sugar
  • 3 eggs
  • 2 apples
  • 1/4 cups apricot jam

  • Peel the apples and slice them. Preheat the oven to 325ºF. Grease and flour a 28cm long by 10cm wide loaf pan.
  • In a small saucepan, put water and raisins and boil, then drain the raisins and mix them with the rum, set aside. Sift flour with baking powder.
  • With a mixer, blend butter with sugar at medium speed, adding the eggs one at a time. Add the raisins and rum. Gradually add the flour to achieve a smooth batter.
  • Put half of the batter in the pan, arrange almost all the apples, reserving about 6 slices, add the rest of the batter spreading it well and decorate with the apple slices.
  • Bake for 60 minutes. Remove from the oven. Cool on a rack for 15 minutes and unmold, placing it with the apples on top as decoration. With a brush, spread the jam and let it cool completely.
