Apple Pie with Caramel and Walnut Topping

  • 2 cups flour
  • 1 cup whole-wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups sugar
  • 3/4 cups vegetable oil
  • 1 egg
  • 3 egg whites
  • 2 teaspoons vanilla essence
  • 3 apples, for medium baking, peeled and cut
  • 1 cup walnuts, chopped
  • 1/4 cups butter
  • 1/2 cups brown sugar
  • 1/3 cups evaporated milk
  • 1/4 cups walnuts, chopped, for garnish

  • Preheat the oven to 350º F.
  • Spray a 13x9 inch baking dish with oil.
  • In a medium bowl, mix the flour with the baking soda and salt.
  • In a large bowl, mix the sugar, oil, egg, egg whites, and vanilla.
  • Beat with an electric mixer or hand whisk until the mixture is light and smooth.
  • Incorporate the flour mixture.
  • Mix to combine the ingredients. The mixture is very thick. Fold in the apples and walnuts.
  • Pour the batter into the baking dish. Distribute the mixture evenly in the corners of the dish so that the cake rises evenly.
  • Bake in the preheated oven for 30 to 35 minutes. Remove from the oven and let cool for 15 minutes. Serve alone, with a dusting of powdered sugar, or with the preparation that follows.
