Apricot Gelatin with Raspberries

1 kilo apricot
1 envelope unflavored gelatin powder
250 grams sugar
100 milliliters cream
150 grams raspberries, washed and disinfected

In a pot with boiling water, we place the apricots for 2 minutes and remove them immediately.
We peel them, remove the pit, and cut them into 2 parts and set aside.
We dissolve the gelatin in 2 tablespoons of hot water.
We mash the apricots to obtain a puree, add the sugar, and incorporate the gelatin.
We whip the fresh cream and add it to the previous preparation.
In a mold, we pour the mixture and let it refrigerate for 3 hours.
We unmold it by placing the mold over a bit of warm water and covering it with a plate to then flip it and remove the dessert.
The raspberries are placed on top for decoration.
