Apricot Gelatin with Raspberries

Very original French dessert, delicious apricot and raspberry gelatin.

  • 1 kilo apricot
  • 1 envelope unflavored gelatin powder
  • 250 grams sugar
  • 100 milliliters cream
  • 150 grams raspberries, washed and disinfected

  • In a pot with boiling water, we place the apricots for 2 minutes and remove them immediately.
  • We peel them, remove the pit, and cut them into 2 parts and set aside.
  • We dissolve the gelatin in 2 tablespoons of hot water.
  • We mash the apricots to obtain a puree, add the sugar, and incorporate the gelatin.
  • We whip the fresh cream and add it to the previous preparation.
  • In a mold, we pour the mixture and let it refrigerate for 3 hours.
  • We unmold it by placing the mold over a bit of warm water and covering it with a plate to then flip it and remove the dessert.
  • The raspberries are placed on top for decoration.
