Using a sharp knife or spoon, remove the stick from the apples. Use a peeler to peel the top third of each apple. Place the apples in a baking dish.
In a medium pot over medium heat, combine 3/4 cup of cream, cranberry juice, sugar, and butter. Cook until it boils.
Pour the sauce over the apples and bake for 1 hour.
When removing the apples from the oven, pour the sauce back into the pot and boil for 2-3 minutes or until the sauce has thickened. Pour sauce over each apple as well as 1 tablespoon of whipped cream. Serve.
