Banana and Raisin Bread

  • Mash the bananas into a puree.
  • Separate the egg whites and yolks. Whip the egg whites until stiff peaks form.
  • Mix the sugar with the butter and the egg yolks.
  • Combine the flour with the baking soda and mix it into the sugar mixture.
  • Incorporate the bananas and, using a spatula, fold in the egg whites, vanilla, nutmeg, cinnamon, raisins, and walnuts.
  • Pour into a previously greased and floured mold and bake at 180 °C for 40 minutes or until a toothpick inserted comes out clean.
