Banana Cupcakes

  • 4 eggs
  • 1 cup sugar
  • 1 teaspoon liquid vanilla
  • 1 cup vegetable oil
  • 1/2 teaspoons salt
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon powder
  • 1 teaspoon ginger powder
  • 3 bananas
  • 1 apple
  • 1/2 cups nut , chopped
  • 380 grams cream cheese
  • 90 grams unsalted butter
  • 2 cups powdered sugar
  • vegetable coloring

  • Preheat the oven to 200°C.
  • Beat the egg whites until stiff peaks form. Add sugar and oil while continuing to beat.
  • Add the flour, baking powder, and other spices. Make a puree with the banana and finely chop the apple.
  • Gently fold in the banana and apple into the mixture.
  • Pour into cupcake molds until half full. Bake for about 60 minutes or until a toothpick inserted comes out dry.
  • For the frosting: Mix the cream cheese and butter, then add the powdered sugar. Use food coloring as desired.
  • Decorate the cupcakes with the frosting once they are cool.
