Banana Oatmeal Cookies

These are whole grain cookies, delicious and easy to make for a healthier option to share with your family or friends; be sure to prepare them.

  • 2 ripe bananas, or bananas, peeled and chopped
  • 1/2 cups peanuts, or walnuts
  • 1 cup brown sugar
  • 1 cup cranberries, or raisins
  • 1/3 cups oil
  • 2 cups oats
  • 1 teaspoon liquid vanilla , or lemon zest
  • 1/2 teaspoons salt

  • Mix the banana, vanilla extract or lemon zest, and sugar well. Incorporate the oil.
  • Add the oats and salt, mixing again until it forms a homogeneous paste.
  • Finally, incorporate the blueberries, peanuts, and let the dough rest for a few minutes until it has absorbed the juice from the fruit.
  • Grease a baking tray and place the dough in spoonfuls on it. Bake at 180°C for 25 minutes or until they are well golden.
