Banana Snow with Cinnamon, Yoghurt and Vanilla Custard

  • 2 envelopes unflavored gelatin powder, hydrated (14g)
  • 1 1/2 cups whipping cream
  • 1/4 cups icing sugar
  • 1 cup Oikos® plain Greek yogurt
  • 1 cup Danette® Vanilla Custard
  • 3 bananas
  • 2 teaspoons cinnamon powder
  • 1/2 cups whipped cream, for decoration
  • 10 cookies, for decoration

  • Using a spoon, mash the bananas and add cinnamon, set aside.
  • In a bowl, mix the Oikos® Natural Yoghurt with Danette® Vanilla Custard and the bananas with cinnamon. Set aside.
  • Whip the cream; when it doubles in volume, gradually add the powdered sugar until fully incorporated.
  • Melt the gelatin in a water bath and set aside.
  • Gently fold the whipped cream into the bowl with the yoghurt, custard, and banana mixture, taking care not to deflate the mixture.
  • Gradually add the gelatin to the previous mixture while stirring continuously, until fully incorporated.
  • Pour into cups and refrigerate for 2 hours.
  • Decorate with whipped cream and cookies.
