Blackberry and Cream Cheese Empanada

  • 2 cups blackberries
  • 1 cup sugar
  • 1 tablespoon lime juice
  • flour, for rolling out
  • 350 grams puff pastry
  • 1/2 cups cream cheese, in cubes
  • egg, for brushing
  • icing sugar, for decorating

  • Preheat the oven to 200°C.
  • In a pot, cook the blackberries with the sugar for about 30 minutes over low heat or until it reaches a thick consistency, add the lemon juice and mix well. Let cool and set aside.
  • On a floured surface, roll out the puff pastry to approximately 3 mm thick and use a 10 cm round cutter to cut out disks.
  • Fill the puff pastry disks with blackberry jam and cream cheese, close them and use your hands to make a fold, place them on a baking sheet and brush with egg.
  • Bake for 20 minutes or until golden brown, let cool and decorate with powdered sugar.
