Blueberry Cake with Grand Marnier Glaze

These delicious blueberry and orange loaves are glazed with powdered sugar and orange liqueur.

  • 1 1/2 cups unsalted butter, at room temperature
  • 1 1/2 cups sugar
  • 4 eggs
  • 1 cup orange juice
  • 1 cup sour cream, sour cream
  • 2 tablespoons orange zest
  • 2 tablespoons vanilla essence
  • 4 cups flour
  • 1 tablespoon baking powder
  • 1/2 tablespoons salt
  • 1 1/2 cups cranberries
  • 2 cups icing sugar
  • 8 tablespoons Grand Marnier orange liqueur

  • Preheat the oven to 120 degrees Celsius. Grease two loaf pans with butter.
  • With an electric mixer, mix the butter and sugar until fluffy. Add the eggs one at a time and continue mixing.
  • Add the orange juice, sour cream, orange zest, and vanilla and mix for 2 more minutes.
  • In another deep bowl, mix the flour, baking powder, and salt. Add this mixture and the blueberries to the mixer and combine with the wet ingredients.
  • Pour the batter into the loaf pans and bake for 70-75 minutes or until a toothpick inserted comes out clean.
  • Remove the loaves from the oven and let them cool for 10 minutes. Unmold.
  • In a deep bowl, whisk the powdered sugar with the orange liqueur for the glaze. Using a spoon, cover the loaves with the glaze and let them cool before serving.
