Butter Cookies with Mint Caramel

  • 180 grams butter, at room temperature
  • 3/4 cups Great Value® Sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 3 cups Great Value® wheat flour
  • 1 teaspoon baking powder
  • 227 grams Great Value® cream cheese
  • 1/4 cups Great Value® icing sugar
  • 1 teaspoon vanilla essence
  • 10 caramels, crushed mint

  • Preheat the oven to 180°C and grease and flour a baking sheet.
  • For the cookies, beat the butter with the sugar in a mixer. Add the egg and vanilla and continue beating.
  • Mix the flour with the baking powder and gradually add it at low speed to the butter mixture. Beat until incorporated.
  • Take the dough out and wrap it in non-stick plastic wrap and refrigerate for 20 minutes. Roll out and cut the cookies using a round cutter.
  • Place the cookies on the baking sheet and bake for 15 to 20 minutes or until the edges are golden. Remove and cool.
  • For the cream cheese frosting, cream the cheese with the powdered sugar and vanilla.
  • Decorate the cookies with the frosting and the chopped mint caramel.
