Beat the margarine with the sugar in the mixer until smooth. Add the egg, vanilla, and continue mixing until combined.
Place the flour in a bowl, make a well in the center, add the margarine-sugar mixture, and mix it with your fingers only until the dough comes together. Divide the dough in half, wrap in plastic wrap, and refrigerate for 30 minutes.
Roll out the first half of the dough with a lightly floured rolling pin on a floured surface.
Spray a baking sheet with 2 sprays of PAM® Butter, cut out circles, and place them on the sheet, leaving 3 cm between each cookie.
Bake the cookies for 15 minutes.
