Preheat the oven to 180° C
In a bowl, mix the melted butter with the cajeta, mixing well until you achieve a homogeneous mixture. Set aside.
In a bowl, beat the egg yolks with the sugar until they double in volume, then add the previous mixture in a thin stream and set aside.
Gradually add the flour with the baking powder until you incorporate all the flour into the mixture, set aside.
Beat the egg whites until they double in volume and form peaks. Gently fold the egg whites into the yolk mixture and add a bit of food coloring.
Serve the mixture in small greased and floured bowls. Bake for 18 minutes, remove from the oven when it is cooked on the outside and liquid on the inside. Serve on a plate with vanilla ice cream and berries. Enjoy.
