Amaretto Pastries

Delicious individual cakes, finger-licking good with a delicate almond liqueur flavor.

  • 2 eggs , medium
  • 1 cup flour
  • 1/3 cups sugar
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla essence
  • 1 glass almond liqueur
  • 1 teaspoon baking powder
  • 1/4 cups almonds, in pieces
  • 1 stick double cream cheese
  • 1/2 cups powdered sugar

  • Beat in a bowl the eggs, sugar, oil, flour, vanilla, 2 tablespoons of liquor, and baking powder until it reaches a creamy and thick consistency.
  • Preheat the oven to 180 degrees.
  • Add chopped almonds to the mixture.
  • Place liners in the molds, one liner per mold.
  • Fill the liners a little over halfway.
  • Once the entire mixture is in the liners, which are in the molds, put them in the oven for 15 to 20 minutes.
  • While the pastries are in the oven, mix the cream cheese with the powdered sugar gradually.
  • When these ingredients are incorporated, add the remaining liquor, this time beating at high speed to avoid lumps.
  • Remove the pastries from the oven, let them cool, and unmold from the molds.
  • Using a spoon or a piping bag, add the cream cheese and amaretto topping to the pastries.
  • Eat them hot or cold.
