Preparation of 3 wine sauce:
Boil the 3 wines with the sugar, lemon juice, and 6 cloves until it reduces by half or reaches a honey-like consistency, not too thick.
During the cooking process, soak the blueberries for 10 minutes to hydrate them and absorb the wine flavor, then remove them to cool, drain excess liquid, and set aside for filling the pastries.
Roll out the Puff Pastry using a rolling pin.
Cut the dough into circles of approximately 15 cm.
Lightly beat the egg and brush the edges of the circles.
Place a slice of panela or cream cheese in the center of each circle, top with the blueberries (previously soaked for 10 minutes in the reduced wine), sprinkle with a little ground cinnamon and sliced almonds (optional), fold the edges up, pressing lightly to seal them.
Brush the top of the pastry with egg.
Place on a tray and bake in a preheated oven at 180°C for about 25 to 30 minutes, until the top is golden.
