Carrot and Yogurt Cake

  • 1 cup FAGE® Total 0% greek style yogurt
  • 1/2 cups carrot, grated
  • 3/4 cups orange juice
  • 1/3 cups brown sugar
  • 1/3 cups golden raisin
  • 1/3 cups sunflower seeds
  • 1/4 cups sunflower oil
  • 3 eggs, beaten
  • 1/2 teaspoons vanilla essence
  • 1 1/3 cups whole-wheat flour
  • 1/2 cups wheat sprouts
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoons nutmeg

  • Preheat the oven to 325ºF.
  • Mix the carrots, FAGE® Total 0% Greek Style Yogurt, orange juice, sugar, golden raisins, sunflower seeds, oil, eggs, and vanilla in a large mixing bowl.
  • In another bowl, mix the flour, wheat germ, baking soda, cinnamon, and nutmeg.
  • Fold the dry ingredients into the carrot mixture gradually until fully combined.
  • Pour the mixture into a greased rectangular pan and bake for 1 hour.
  • Remove from the oven, unmold, and let cool.
  • Allow to cool for 2 hours, cut into squares, and serve.
