  • 1 cup vegetable oil
  • 4 eggs
  • 1 tablespoon vanilla essence

  • 2 1/2 cups all-purpose wheat flour, refined

  • 1 tablespoon baking powder
  • 2 teaspoons cinnamon
  • 3 cups carrot, grated
  • 1 cup pineapple, chopped
  • 1 cup shredded coconut
  • 1/2 cups walnuts, chopped

  • Blend the first 5 ingredients.
  • Once the mixture is ready, add the flour, baking soda, baking powder, and cinnamon, and mix well.
  • Add the pineapple, coconut, carrot, and walnuts.
  • Place the batter in the molds and bake at 180°C for 25 to 30 minutes.
  • To decorate, boil the dried fruits separately for 10 minutes over low heat.
  • Fill with cajeta and cover the top of the cake with cajeta, then place the dried fruits on top in circles.
