Carrot Cake with Oats

  • 1 cup apple purée
  • 3 eggs
  • 2 1/2 cups Quaker® oatmeal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoons salt
  • 1 teaspoon cinnamon powder
  • 1/4 teaspoons clove powder
  • 1/4 teaspoons ginger
  • 3/4 cups raw sugar
  • 1 teaspoon vanilla essence
  • 2 cups carrot, grated
  • 1 cup walnuts, finely chopped
  • 1 cup cream cheese, reduced-fat, for the frosting
  • 1/2 cups whipping cream, for the frosting
  • 3 tablespoons icing sugar, for the frosting
  • 1 tablespoon lime zest
  • caramelized walnuts, for decoration or natural walnuts

  • Blend the applesauce, eggs, Quaker® Oats, baking powder, baking soda, salt, cinnamon, clove, ginger, brown sugar, and vanilla extract for 5 minutes or until you achieve a smooth mixture. Pour into a bowl and set aside.
  • Add the grated carrot and walnuts, then mix until combined, pour into a rectangular mold lined with wax paper, and bake at 180 °C for 50 minutes. Allow to cool and unmold.
  • For the frosting: Beat the cream cheese, heavy cream, powdered sugar, and lemon zest in a bowl with the help of a hand mixer. Set aside.
  • Cover the carrot cake with oats with cream cheese frosting and decorate with walnuts.
