Carrot Muffins or Cake

  • 100 grams nut

  • 2 cups whole wheat flour
  • 1/2 teaspoons nutmeg
  • 1/2 teaspoons 5 spice seasoning
  • 2 tablespoons cinnamon powder
  • 1/2 teaspoons salt
  • 1 1/2 tablespoons brown sugar
  • 1 cup oil
  • 4 eggs
  • 1 tablespoon vanilla essence
  • 2 cups carrot , ,grated
  • 1 1/2 cream cheese
  • 2 tablespoons vanilla essence
  • 1 tablespoon cow's milk
  • 2 cups powdered sugar

  • Preheat the oven to 200 degrees C. In a medium bowl, combine the flour, nuts, baking powder, nuts, baking soda, nutmeg, spices, cinnamon, salt, and sugar. Stir with a spoon until all the dry ingredients are well combined... at this point, add the freshly grated carrot and mix well. In a large bowl, beat the egg, add the oil and sugar with the mixer, and incorporate all the ingredients until the sugar is well dissolved. Add the flour mixture to the sugar mixture and stir until the ingredients are combined, do not overmix.
  • Bake at 200°C for 20 – 35 minutes or until a knife or toothpick comes out clean, let cool before decorating. In a bowl, beat the cream cheese until you have a smooth mixture. Add preferably clear vanilla, then add powdered sugar until you obtain a frosting for decoration. To make carrot shapes, use artificial coloring and with a piping bag create zigzag shapes of carrots.
