Homemade Carrot Cake

Completely homemade cake that is always a hit at your gatherings.

  • 2 1/2 cups flour
  • 2 tablespoons baking powder
  • 2 tablespoons cinnamon
  • 1 tablespoon baking soda
  • 1/2 tablespoons salt
  • 4 eggs
  • 1 cup oil
  • 2 cups sugar
  • 1/3 cups cow's milk
  • 1 tablespoon liquid vanilla
  • 2 cups carrot , finely grated
  • 1 cup nut
  • 1 cup coconut, grated
  • 1 stick cream cheese
  • 1/2 cups powdered sugar
  • lemon juice

  • Preheat the oven to 170ºC.
  • Grease a bundt pan with butter and dust it with flour, set aside.
  • In the mixer, combine the first 10 ingredients.
  • Once the mixture is ready, fold in the carrot, grated coconut, and nuts with a spatula.
  • Pour the mixture into the bundt pan and bake in the oven for one hour.
  • Turn it off and let it sit for 10 minutes.
  • For the frosting, put the cream cheese in the mixer; when it is creamy, add the powdered sugar. Once mixed, add the juice of one lemon.
  • Remove the cake from the pan, decorate with the frosting, and sprinkle chopped nuts on top.
