In a bowl, add the oil, sugar, and egg, and beat well.
Sift the flour, baking soda, and salt, and add to the previous mixture.
Once well incorporated, add the cinnamon, vanilla, pineapple, and nuts, and continue beating until well distributed. Finally, add the carrot and beat well.
Bake in a preheated oven at 350ºF for 45 minutes, preferably in a bundt or any previously greased mold. Grease with butter and flour to prevent sticking, pour in the mixture, and bake. Insert a toothpick, and if it comes out clean, it's ready.
Let it cool and sprinkle with powdered sugar or you can add cream cheese frosting.
