  • 120 grams walnuts
  • 150 grams self-rising flour
  • 150 grams xylitol
  • 2 eggs, organic
  • 140 milliliters vegetable oil
  • 180 grams carrot, grated
  • 100 grams raisins, golden brown
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon powder

  • Preheat the oven to 180°C. Grease and line an 18cm deep round cake pan with parchment paper.
  • Chop the walnuts coarsely on a cutting board.
  • Mix the flour, cinnamon, baking soda, xylitol, and walnuts in a large bowl.
  • Beat the eggs and oil in another bowl. Add the flour mixture and stir until combined. Fold in the grated carrots and raisins.
  • Bake for 50-60 minutes, until golden brown and a wooden toothpick inserted in the center comes out clean. Check after 40 minutes, and if the cake is rising too much, loosely cover it with aluminum foil.
  • Let the cake cool in the pan for 10 minutes, then unmold onto a wire rack. Serve warm or at room temperature.
