Apple Cheesecake in Cups

Surprise and pamper mom on her day with a delicious dessert like this for individual serving.

  • 1 cup apple purée
  • 1 1/2 cups low-fat milk
  • 20 cookies, vanilla (for the base)
  • 1/2 cups unsalted butter , for the base
  • 2 tablespoons water
  • 45 grams cream cheese, low-fat
  • 1 teaspoon vanilla essence
  • 1/4 teaspoons cinnamon powder
  • 1 envelope Splenda
  • 1 envelope unflavored gelatin
  • 1/2 sticks unsalted butter , for decoration
  • 2 red apples, diced into cubes

  • To prepare the base, pour the cookies and one-third cup of butter into a bowl.
  • In a short glass, place some of the base mixture and press down with a spoon to compact. Repeat this step with 3 other glasses to have the appropriate portions.
  • To prepare the filling, pour the apple puree, milk, cream cheese, water, vanilla extract, cinnamon, and the packet of Splenda into your blender. Add the packet of gelatin for each liter to create a thicker texture. Blend until you achieve a smooth mixture.
  • Place the cups in the refrigerator for one hour to achieve firmness. Before serving, place the apple cubes in a pan with 1/2 tablespoon of unsalted butter and sauté. Once ready, decorate the cups with the cubes.
