Try this delicious blackberry cheesecake, it’s an exquisite combination that will surprise all your guests, it’s the perfect dessert for an elegant dinner.
1 package blackberries, or 1 bag of frozen blackberries
4 eggs , at room temperature
1 teaspoon vanilla essence
1 pinch salt
4 packages cream cheese

Preheat the oven to 325 F (160 degrees Celsius).
Melt the butter and add the crushed María cookies and 3 tablespoons of sugar. Mix well.
Put the cookie mixture in the springform pan, pressing down with your fingers to make it flat. Bake in the oven for 5 minutes to firm it up a bit.
In a food processor, place the blackberries and puree. Strain through a sieve, and add 2 tablespoons of sugar. Taste, and add more sugar if necessary.
Beat the cream cheese until smooth, and add 1 ½ cups of sugar. Add a pinch of salt and the vanilla extract. Gradually add the eggs one at a time, mixing well.
Pour the cheese mixture over the mold and the blackberry sauce on top, using a toothpick to swirl and spread the blackberry sauce.
Place the mold over some Pyrex with hot water (up to ¾ of the mold) and bake for 22 minutes. (Note: the water must be very hot)
Remove from the oven and let cool, then refrigerate for at least 4 hours or ideally overnight.
