Cappuccino Cheesecake

Cheesecake is a classic dessert worldwide, and while there are different versions according to each country, it is undoubtedly a delicious treat. We created for you the traditional New York cheesecake with a delightful coffee flavor, with a chocolate cookie crust and a delicious white chocolate cream that makes it completely irresistible.

  • 150 grams chocolate cookies, for the crust
  • 1/2 cups butter, melted, for the crust
  • 4 San Juan® eggs
  • 1 1/2 cups sugar
  • 600 grams cream cheese, at room temperature
  • 500 milliliters whipping cream
  • 1/4 cups instant coffee
  • 2 teaspoons vanilla essence
  • 300 grams white chocolate, for the ganache
  • 100 milliliters whipping cream, hot for the ganache
  • 1 tablespoon cinnamon powder, for the ganache

  • Preheat the oven to 170°C.
  • Place the cookies in a resealable bag and use a rolling pin to crush the cookies until you obtain a fine powder.
  • Mix the cookies with the butter and place them on a cake base, pressing to compact into a crust. Set aside.
  • Beat the San Juan® eggs with the sugar until they change color, add the cream cheese and beat until combined, add the heavy cream and beat until the cream doubles in volume. Gradually add the coffee and vanilla extract.
  • Pour the cheesecake mixture over the cookie crust and bake for 1 hour. Let cool and refrigerate for at least 2 hours.
  • For the ganache, mix hot cream with white chocolate and cinnamon until incorporated. Refrigerate for at least 30 minutes.
  • Whip the ganache until stiff peaks form and cover the cheesecake with this mixture.
  • Decorate with cookies, chocolate shavings, and ground cinnamon.
  • Serve.
