Cheesecake with Cheese and Blackberries

  • 1/2 cups cream cheese
  • 1/2 cups cow's milk
  • 1 can condensed milk
  • 1/2 cups blackberry jam
  • 2 tablespoons unflavored gelatin powder
  • 1/2 cups water
  • 2 cups María cookies, crushed
  • 2 tablespoons unsalted butter , melted

  • Mix the cookies with the butter and press well into the bottom of a mold. Dissolve the gelatin in 1/2 cup of water and heat until it boils.
  • In a separate bowl, blend the cheese, milk, condensed milk, and juice in a blender until well combined. With the blender running, add the dissolved gelatin. Pour the mixture over the cookie base.
  • Refrigerate for 3 to 4 hours. Serve with blackberry jam.
