  • 500 grams cream cheese, at room temperature
  • 3/4 cups sugar
  • 4 San Juan® eggs
  • 1 tablespoon cornstarch
  • 1 cup whipping cream
  • orange zest

  • In a bowl, mix the cream cheese with the sugar using a whisk to blend and eliminate any lumps in the Basque cheesecake mixture.
  • Add the San Juan® eggs one by one, continuing to whisk vigorously. Then, incorporate the cornstarch and finally pour in the heavy cream and orange zest. Set aside.
  • Line a mold with parchment paper, pour the mixture for the Basque cheesecake, and bake at 220 °C for 40 minutes. Let it cool, unmold, and set aside the cheesecake.
  • Serve the Basque cheesecake and accompany it with a cup of coffee.
