Blackberry Cheesecake (no bake)

  • 1/2 cups water, hot
  • 1 cup icing sugar
  • 1 package cookies, sweets
  • 200 grams Philadelphia® cream cheese
  • 1 tablespoon vanilla essence
  • 2 cups cow's milk, cold
  • 2 envelopes unflavored gelatin
  • 1 cup water
  • 1 cup sugar
  • 2 cups blueberry
  • 1/4 cups condensed milk
  • 2 tablespoons butter, melted

  • We mix the hot water with the powdered sugar until we get a caramel.
  • We mix the caramel with the sweet cookies and butter until we obtain a dough.
  • We place the base in the container where we are going to make the cheesecake.
  • We place the container in the freezer for 10 minutes.
  • In a separate bowl, we mix the condensed milk with the cream cheese, 1 cup of milk, and vanilla extract, and we put it in the microwave for 1 minute. Then we add 1 packet of unflavored gelatin and mix with a mixer on medium speed while adding the other cup of milk.
  • We take the base out of the freezer and place the mixture on top, then let it chill in the refrigerator for 2 hours.
  • Meanwhile, we make the sauce, placing the water with the sugar and the blackberries in a pan and mixing until we obtain a sauce.
  • We divide the sauce into 2 parts and then add the other packet of unflavored gelatin to one of them, mixing until there are no lumps, and then we add the other part of the sauce.
  • We pour the sauce over the cheesecake and keep it in the refrigerator until serving.
