Beat the cream cheese with ¼ cup of sugar.

Place the sugar in a pan over low heat. Pour the cup of whole pistachios onto a silicone mat. Once the sugar is liquid, pour it over the pistachios. Once the candy has cooled, break it with your hands.
Once the cheesecake has set, remove it from the mold and decorate it with the candied pistachios.
