  • 2 cups cookies, ground
  • 1/4 cups unsalted butter , melted
  • 10 grams natural unflavored gelatin
  • 1/4 cups sugar
  • 1 cup water, boiling
  • 2 packages cream cheese
  • 1/4 cups sugar
  • 1 cup ground unsalted pistachio
  • 4 drops gel food coloring, green
  • 1 cup pistachios, shelled

  • Crush the cookies and add the melted butter. Place this mixture at the bottom of the mold and press down, ensuring it covers the entire surface of the mold.
  • In a bowl, combine the gelatin and ¼ cup of sugar. Pour in the hot water and whisk until the ingredients are incorporated. Let cool.
  • Beat the cream cheese with ¼ cup of sugar.
  • Add the ground pistachios to the cream cheese mixture and beat. Incorporate the gelatin and continue beating until the mixture thickens.
  • Add the green food coloring. Pour this mixture into the mold with the cookies. Refrigerate for 2 to 4 hours.
  • Place the sugar in a pan over low heat. Pour the cup of whole pistachios onto a silicone mat. Once the sugar is liquid, pour it over the pistachios. Once the candy has cooled, break it with your hands.
  • Once the cheesecake has set, remove it from the mold and decorate it with the candied pistachios.
