  • 2 cups María cookies
  • 3/4 cups butter, melted
  • 5 packages cream cheese
  • 1/4 cups sugar
  • 1/2 cups lime juice
  • 1 teaspoon vanilla essence
  • 1/4 cups condensed milk
  • 3 envelopes unflavored gelatin powder, hydrated and melted
  • 2 cups blackberries
  • 1/2 cups sugar
  • 1 tablespoon lime juice
  • whipped cream, for decoration
  • 1 lemon, cut into half moons, for decoration

  • In a bowl, crush the cookies, add the melted butter, and mix very well. Pour into a cake pan, press to form a base, and refrigerate.
  • For the filling, beat the cream cheese with the sugar, add the lemon juice, vanilla, gradually add the condensed milk, and the melted gelatin in a thin stream.
  • Pour the filling over the cookie base, and smooth the surface with a spatula. Refrigerate until set.
  • For the blackberry compote, cook the blackberries with sugar and lemon juice in a small pot for 20 minutes or until the fruit breaks down and you obtain a jam. Cool.
  • Using a piping bag, pipe the whipped cream around the edge of the cheesecake, pour the blackberry jam in the center, decorate with the lemons and the blackberries coated in sugar, refrigerate until serving.
