Strawberry Swirled Cheesecake

This delicious cheesecake features a swirl of strawberry jam. It’s easy to prepare and the combination of flavors is delightful.

  • 250 grams María cookies, ground
  • 130 grams unsalted butter
  • 3 packages cream cheese, (225 grams each), at room temperature
  • 3/4 cups sugar
  • 1/2 cups whipping cream
  • 1/2 cups sour cream
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla essence
  • 4 eggs
  • 1/3 cups strawberry jam, seedless

  • Preheat the oven to 180 degrees Celsius (350 F).
  • Crush the Maria cookies until they turn to powder. Melt 130 grams of butter in a pot and add the powdered Maria cookies. Press into the cake mold to make it smooth.
  • Mix the cream cheese (at room temperature) with sugar using an electric mixer. Add the eggs one by one, making sure to scrape down the sides with a spatula.
  • Add the cream, cornstarch, and vanilla, and mix well (just stir quickly to avoid overmixing).
  • Place in the mold with the cookie base.
  • Using a spoon, add tablespoons of jam (previously mixed or dissolved in the microwave to make it liquid). Use a knife to make circular motions, mixing the jam and creating a marbled effect.
  • Bake in the oven for about 45-50 minutes (the center of the cake should be slightly jiggly when taken out of the oven).
  • Let it cool for one hour.
