Delicious chocolate cake with condensed milk ganache, it is a spectacular recipe and the perfect dessert when you want to pamper your loved ones. It is a recipe that turns out to be ¡delicious!
Beat the yolks and sugar, sift the flour with the cocoa and spread on a baking sheet to then cut into circles, bake at 180 degrees Celsius for approximately 15 - 20 minutes.
For the base cream: While the sugar is cooking with the water, beat the egg yolks. When the sugar begins to change color, add it to the beaten yolk cream and mix at low speed.
For the chocolate mousse: Soak the gelatin sheets in cold water and drain them, dissolve in the base cream that we have mixed with the chocolate. Whip the cream and separately beat the egg whites and fold them into the mixture with a spatula.
Ganache Cream: Cook the condensed milk until it becomes toffee (with a caramel texture) and add it to the melted chocolate.
Cut the sponge cake into circles, then place it in a mold and cover it with mousse, and repeat with all the discs until the mousse is finished, then put it in the refrigerator to set.
We heat the ganache cream in a double boiler and glaze the cake.
We decorate with chocolate and cream truffles and the other with chocolate and condensed milk
