Chocolate Christmas Log

  • 3 eggs, for the cake
  • 150 grams sugar, for the cake
  • 50 grams cocoa powder, for the cake
  • 1/2 tablespoons vanilla essence, for the cake
  • 200 grams butter, melted for the chocolate sauce
  • 250 grams bittersweet chocolate, for the chocolate sauce
  • 1/2 tablespoons vanilla essence, for the chocolate sauce
  • 50 grams brown sugar, for the chocolate sauce
  • 1 cup whipped cream

  • Preheat the oven to 180°C.
  • Separate the egg yolks from the whites and beat the yolks with the sugar until they double in volume and have a pale color.
  • Sift the cocoa and add it to the mixture, beat again and set aside.
  • Beat the egg whites until soft peaks form and gently fold them into the chocolate mixture.
  • Place a baking tray with parchment paper and pour the chocolate mixture. Bake at 180°C for 20 minutes.
  • For the chocolate sauce, add the dark chocolate to the butter and mix until the chocolate is integrated. Incorporate the brown sugar and vanilla, mix and refrigerate for an hour.
  • Whip the cream and set aside in the refrigerator.
  • Sprinkle powdered sugar over parchment paper and flip the cake, remove the parchment paper and spread a light layer of the chocolate sauce; on top of this, spread the whipped cream; roll the cake using the parchment paper and making it as tight as possible.
  • Spread the remaining chocolate sauce over the roll and, using a fork, create the marks of a log and let it cool in the refrigerator for 30 minutes.
  • Decorate with cherries, raspberries, mint, and a little sifted powdered sugar.
