Mole Chocolate Cake

  • 4 Mexican chocolate tablets, for the cake
  • 1 cup whipping cream, for the cake
  • 6 eggs, for the cake
  • 1 1/2 cups wheat flour, for the cake
  • 1 tablespoon baking powder, for the cake
  • 1/2 cups butter, melted
  • 3/4 cups whipping cream, hot, for the ganache
  • 4 tablespoons mole sauce, in paste, for the ganache
  • 1 1/2 cups bittersweet chocolate, melted, for the ganache
  • colored pepitorias, for decoration

  • Add the table chocolate and the whipping cream to a bowl. Heat in the microwave for 90 seconds. Set aside.
  • Use a spatula to mix and dissolve the chocolate and cream. Add the eggs one by one and mix. Gradually add the wheat flour, baking powder, and melted butter. Continue incorporating with a whisk and mix until combined.
  • Pour the cake mixture into 2 greased 15 cm diameter molds. Bake at 170 °C for 30 minutes, let cool and unmold.
  • In a bowl, mix the hot whipping cream with the mole, dissolve with a whisk, add the melted chocolate and mix. Chill and set aside.
  • In a bowl, add the chocolate mole cream and beat for 10 minutes, until you obtain a smooth and integrated cream. Set aside.
  • Cut the chocolate cakes in half. Place one on a cake base, fill with the chocolate mole cream. Repeat until you create 4 layers. Finally, cover the cake with the chocolate cream and decorate with colorful pepitorias.
