Pistachio and Cardamom Dark Chocolate

  • 125 grams flour , all-purpose
  • 100 grams unsalted butter , cold
  • 50 grams pistachios, toasted and ground
  • 50 grams powdered sugar
  • 25 grams cocoa
  • 1 egg yolk
  • 400 grams whipping cream , or cream
  • 150 milliliters cow's milk , pasteurized
  • 50 grams unsalted butter , at room temperature
  • 3/4 cups sugar , powdered
  • 400 grams couverture chocolate, dark chocolate at 53% or 70%
  • 3 egg yolks
  • 2 eggs
  • cardamom, in seeds

  • Sift the flour, sugar, add the processed pistachios, the egg yolk, and the chopped cold butter, mix the ingredients well with your hands, and refrigerate for 30 min. or until used.
  • Roll out the dough in a mold and bake it for a blind bake at 180ºC for about 15 to 20 min. Heat the cream, the pasteurized milk, and add the cardamom seeds until it boils for a few minutes. Integrate the butter and sugar into the previous mixture, strain while pouring over the topping, stir to form a ganache, let it rest to lower the temperature, add the yolks and already beaten eggs, mix, place on the sable base, and bake at 140ºC for 30 min.
  • Then turn off the oven, leave it for 20 more minutes to rest inside, refrigerate and unmold. Place a portion on a plate, sprinkle the dessert with cocoa powder, decorate with starfruit chips, cardamom seeds, and serve with ice cream of your choice.
