Christmas Almond Cake

My family has a tradition for Christmas, since my paternal grandparents got married, to gather and prepare this cake on December 20 as it doesn’t bake but needs to rest for 3 days. It’s a date when we start to live Christmas together. It’s delicious and uncommon.

  • 200 grams almonds, sliced ground
  • 200 grams unsalted butter
  • 200 grams sugar
  • 4 eggs
  • 5 dozens ladyfingers
  • cognac, add approximately half a bottle but it’s to taste
  • cherries, or dried fruit of your preference for decoration
  • 2 tablespoons vanilla essence

  • Beat the butter until creamy.
  • Add the sugar gradually, without stopping to beat.
  • Add one egg, also without stopping to beat, and when it’s completely incorporated into the butter and sugar mixture, continue adding the other eggs one by one.
  • Add the ground almond and mix with a whisk if you have one or if not, with a wooden spoon.
  • Add two shot glasses of rum and mix.
  • Set this mixture aside while we form the base for the cake.
  • Cake base: A rectangle of aluminum foil is spread over a tray, leaving enough excess on all sides to wrap the cake.
  • A layer of ladyfingers is placed, forming the shape we want our cake to be. Example: if we want it to be square, we arrange 15 ladyfingers in that shape.
  • Soak the layer of ladyfingers with rum. Pour one-third of the almond, egg, and butter mixture on top of the layer of ladyfingers.
  • Repeat steps 7, 8, and 9 two more times. You should finish with a layer of ladyfingers on top.
  • Cover with the aluminum foil left on the sides of the tray, sealing the edges perfectly so that there’s no possibility of the filling leaking out.
  • Place something heavy on top of what we wrapped. I use thick books.
  • Leave it like this for three days in a cool place. Not in the refrigerator.
  • After that time, carefully unwrap and turn over with great care onto the platter where we will leave it.
  • Remove all the aluminum foil and decorate to taste with cherries or any other dried fruit.
