Coconut Three Milk Cake

  • 2 egg yolks
  • 2 egg whites
  • 180 grams Domino® raw sugar
  • 240 grams flour
  • 1 tablespoon liquid vanilla
  • 30 grams unsalted butter
  • 1 cup coconut milk
  • 1 cup table cream
  • 1 cup coconut cream
  • 1 tablespoon coconut essence
  • 1 tablespoon unflavored gelatin powder, hydrated and melted
  • 2 cups cream cheese, at room temperature, for the topping
  • 1 cup white chocolate, melted, for the topping
  • 1 cup whipped cream, for the topping
  • 1 cup shredded coconut, toasted, for the filling
  • edible flowers, for decoration

  • For the cake, beat the eggs, egg yolks, and Domino® Muscovado Sugar for 8 minutes (approximately) until doubled in size. Set aside. Beat the egg whites for 5 minutes until doubled in size and gently fold into the previous mixture very carefully so as not to deflate the batter; using a sieve, sift the flour gradually over the egg mixture and fold in until finished; add the melted butter in a stream and fold into the batter.
  • Pour the mixture into a previously greased mold and bake for 50 minutes at 180 °C. Remove from the oven, let it cool, and unmold.
  • For the three milk mixture, mix the coconut milk with the half cream, coconut cream, coconut essence, and gelatin. Set aside.
  • For the topping, using a hand whisk, mix the cream cheese with the white chocolate and whipped cream. Set aside.
  • Slice the cake in half horizontally and soak both halves with the three milk mixture, you can use a brush to help. On a base, place one of the halves and spread a bit of the cream, sprinkle the shredded coconut, and cover with the other half. Freeze for 15 minutes.
  • Cover the cake with the cream you prepared until the surface is completely smooth; you can make 2 layers, but make sure to chill the cake well before spreading the second layer.
  • Place the cake on a platter or cake base and decorate with edible flowers; you can play with shapes, colors, and create an elegant and subtle pattern.
