  • Preheat the oven to 180º C.
  • Beat the egg with half of the sugar and vanilla extract for about 15 minutes, stopping once the mixture changes color (to a lighter shade).
  • Add the remaining sugar and continue beating.
  • Gradually add the oil, ensuring it forms a thread as you incorporate it.
  • Add the heavy cream (not whipped) and vinegar, then add the dry ingredients (flour, cocoa, salt, and baking soda) on low speed.
  • Finally, add food coloring until you achieve a deep red in the mixture, as it loses some of its color intensity during baking.
  • Grease the mold with butter and flour, pour the Red Velvet mixture in. Bake at 180º C for approximately 50 minutes, checking with a toothpick to see if it is cooked (if the toothpick comes out clean, the cake is done).
  • Let the cake cool and unmold. Cut the cake in half with a serrated knife.
  • Add the heavy cream to a bowl and gradually incorporate the sugar while beating. Aim for a firm consistency that forms peaks.
  • Using a fork, remove crumbs from the cake and set them aside.
  • Spread a light layer of the whipped cream prepared over one half of the cake. Place the other half of the cake on top and cover with the whipped cream. Create vertical lines on the edge of the cake using a spatula. Finish decorating with whipped cream roses and sprinkle the cake crumbs.
