Impossible Cajeta with Apple and Blueberries

Using the impossible cake technique, the base of the cake is made with apple, spices, and blueberries, and the flan is made with cajeta; it is a very easy recipe with a special touch.

  • 6 eggs, for the apple cake
  • 125 grams sugar, for the apple cake
  • 125 milliliters canola oil, or similar, for the apple cake
  • 250 grams wheat flour, for the apple cake
  • 1 teaspoon baking soda, for the apple cake
  • 1 tablespoon baking powder, for the apple cake
  • 1 tablespoon ginger powder, for the apple cake
  • 1 tablespoon cinnamon powder, for the apple cake
  • 1/2 teaspoons clove powder, for the apple cake
  • 1/2 teaspoons nutmeg, for the apple cake
  • 1 pinch salt, for the apple cake
  • 450 grams apple, chihuahua or similar (sweet) for the apple cake
  • 1/2 cups cranberries, for the apple cake
  • 1 can condensed milk, for the flan
  • 6 eggs, for the flan
  • 2 tablespoons cajeta, for the flan
  • 3 tablespoons cajeta, or liquid caramel, for the base of the mold

  • To make the cake:
  • Sift and set aside: flour, baking soda, baking powder, ginger, cinnamon, clove, nutmeg, pinch of salt.
  • Remove the core from the apple, and chop finely with the skin; if you have a processor, chop it there, do not grind.
  • Beat the eggs in a mixer, gradually add the sugar and oil, and beat for about 5 minutes until fluffy.
  • Incorporate the flour with a spatula and finally add the apple and blueberries, set this mixture aside for assembling in the mold.
  • Make the flan: For the flan, blend all the flan ingredients in the blender and set aside for assembling in the mold.
  • Assembly for baking: place a layer of cajeta or caramel at the bottom of the mold.
  • Pour the apple paste over the base and finally add the flan liquid.
  • Bake in a water bath for 45 minutes at 180 degrees Celsius.
  • Let it cool completely.
  • Unmold and drizzle with the caramel from the bottom of the mold.
