Mamey Cake

Delicious cake with a very original and delightful mamey flavor. It is highly recommended for celebrating any occasion.

  • 200 grams butter
  • 18 grams sugar
  • 7 eggs
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 cup mamey, in squares
  • 3/4 cups evaporated milk
  • 1 pinch salt

  • Blend the mamey with the milk in the blender.
  • Beat the butter with the sugar (approximately 3 minutes).
  • Add the 7 yolks one by one. Beat for another 3 minutes.
  • Add the mashed mamey and beat for 2 more minutes.
  • Gradually add the sifted flour mixed with the baking powder and salt, folding gently.
  • Finally, gently fold in the whipped egg whites.
  • Pour into the mold. Preheat the oven and bake at 180 degrees for about 50 to 60 minutes, until a toothpick inserted comes out clean.
  • Let cool for 10 minutes and unmold. Decorate to taste.
