200 grams butter
18 grams sugar
7 eggs
2 cups flour
1 teaspoon baking powder
1 cup mamey, in squares
3/4 cups evaporated milk
1 pinch salt

Blend the mamey with the milk in a blender.
Beat the butter with the sugar (approximately 3 minutes).
Add the 7 egg yolks one by one. Beat for another 3 minutes.
Add the mashed mamey and beat for 2 more minutes.
Gradually add the sifted flour with the baking powder and salt, folding gently.
Finally, gently fold in the beaten egg whites until stiff peaks form.
Pour into the mold. Preheat the oven and bake at 180 degrees for approximately 50 to 60 minutes, until a toothpick inserted comes out clean.
Let cool for 10 minutes and unmold. Decorate to taste.
