Mother-in-Law Cake

A very tasty and easy-to-make cake with a delicious flavor and pineapple frosting.

  • 1 cup flour , sifted
  • 1 cup powdered sugar
  • 1 pinch salt
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla essence
  • 5 eggs
  • 1 stick unsalted butter , for greasing the mold
  • 1 can pineapple, chopped
  • 1 cup powdered sugar
  • 1 cup cream

  • In a bowl, beat the egg whites to stiff peaks, then add the beaten yolks until ribbon stage, gradually add the powdered sugar using a sifter along with the vanilla, then incorporate the sifted flour with the baking powder and salt, mix well, and pour into a previously greased and floured baking dish.
  • Bake for 20 minutes at 175 °C, let it cool, and poke it with a toothpick or fork but not all the way through.
  • For the frosting: in a bowl, whip the cold cream with the sugar, mix in the pineapple, and place it on top of the cake.
