Orange Panettone

  • 650 grams flour
  • 50 grams yeast
  • 150 grams sugar
  • 250 milliliters cow's milk
  • 200 grams butter
  • 5 egg yolks
  • 1 teaspoon salt
  • 1 pinch nutmeg
  • 1 lime, (zest)
  • 100 grams candied lime, (crust)
  • 50 grams candied orange, (crust)
  • 150 grams raisins
  • 1 egg yolk
  • icing sugar, (for decoration)
  • 2 slices candied orange, (for decoration)
  • 1 stick cinnamon, (for decoration)

  • Grease a mold with butter and parchment paper.
  • Sift the flour into a bowl, make a hole in the center, crumble the yeast inside, and mix while gradually adding the sugar, milk, and flour.
  • Let it rest for 15 minutes. In a separate bowl, beat the butter with the 5 egg yolks, adding the spices and lemon zest. Add to the bowl with the other mixture, stirring until the dough bubbles, and let it ferment for another 15 minutes.
  • Add the caramelized orange and lemon peels along with the raisins.
  • Mix all the ingredients and form a ball: Pour into the mold and let it rest for 15 minutes. Brush the surface with the remaining egg yolk.
  • Bake in the lower part of the oven, preheated to 200°C, for approximately 90 minutes.
  • Let it cool in the mold and unmold. Dust with powdered sugar and decorate with slices of caramelized orange and a cinnamon stick.
