Sift the flour into a bowl, make a hole in the center, crumble the yeast inside, and mix while gradually adding the sugar, milk, and flour.
Let it rest for 15 minutes. In a separate bowl, beat the butter with the 5 egg yolks, adding the spices and lemon zest. Add to the bowl with the other mixture, stirring until the dough bubbles, and let it ferment for another 15 minutes.
Add the caramelized orange and lemon peels along with the raisins.
Mix all the ingredients and form a ball: Pour into the mold and let it rest for 15 minutes. Brush the surface with the remaining egg yolk.
Bake in the lower part of the oven, preheated to 200°C, for approximately 90 minutes.
Let it cool in the mold and unmold. Dust with powdered sugar and decorate with slices of caramelized orange and a cinnamon stick.
