Sweets and cakes made with almonds are very popular in Yucatán due to the large production of nuts in the state. This heavenly cake recipe is truly delicious. Give it a try!
Grease a mold of approximately 30 cm in diameter, cut a circle the size of the bottom of it, and grease it as well.
Mix the almonds with the flour and baking powder and set aside. Beat the egg whites with the cream of tartar until soft peaks form, gradually adding the sugar while continuing to beat until stiff and shiny peaks form, then add the yolks one at a time.
Carefully incorporate the almond mixture and finally the cognac. Pour this mixture into the mold and bake for approximately 40 minutes or until cooked and golden brown.
Remove it, place it on a rack, let it rest for five minutes, unmold, and let it cool completely. Place it on a serving platter and sprinkle with powdered sugar.
