Hot cake cake with rompope

This delicious cake is economical and very easy to make since it does not require much technique for its preparation, but still the result is delicious.

  • 1 1/2 cups pancake mix
  • 5 eggs
  • 1 cup sugar
  • 1 cup evaporated milk
  • 1 cup vegetable oil
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 1/2 cups shredded coconut
  • 1 can evaporated milk, for the soaking
  • 1 can condensed milk, for the soaking
  • 1/2 cups rompope, for the soaking

  • Preheat the oven to 180°C
  • 1.- With a mixer, combine the eggs, sugar, evaporated milk, oil, vanilla extract, hot cake flour, and baking powder.
  • 2.- Pour the mixture into a previously greased and floured mold, sprinkle the grated coconut on top of the mixture.
  • 3.- Bake for 40 minutes or until a toothpick inserted comes out clean.
  • 4.- Mix with the help of a whisk the rompope, condensed milk, and evaporated milk until fully combined.
  • 5.- Soak the cake with this mixture until it absorbs completely.
  • Ready to serve.
