This lemon cake is fluffy and soft, with a rich yellow lemon glaze that gives it a special touch. It is a perfect cake for a birthday or an important celebration.
1 1/4 cups butter, plus one tablespoon for greasing the pan. At room temperature.
1 1/4 cups sugar
3 eggs
1 tablespoon lime zest
2 1/4 cups flour, plus two tablespoons for dusting the pan.
1 tablespoon baking soda
1 teaspoon baking powder
1 pinch salt
1 cup cow's milk
1 teaspoon vanilla essence
3/4 cups icing sugar, (for the frosting)
1 egg white, (for the frosting)
1 lemon, (for the frosting)
2 drops red food coloring, (for the frosting)

Preheat the oven to 180° C.
Grease and flour a cake pan. Set aside.
In an electric mixer, cream the butter. Incorporate the sugar, eggs, and zest. Add the dry ingredients alternating with the milk and vanilla, mix until you have a smooth and homogeneous batter.
Pour the mixture into the pan and bake for approximately 30 minutes or until a toothpick inserted comes out clean. If not, bake for 10 more minutes. Let cool.
For the frosting, in a small bowl mix the powdered sugar with the egg white until you obtain a thick consistency. Gradually add the lemon juice for flavor and the food coloring. Let it rest.
Once the cake is cool, unmold and decorate with the lemon glaze. Serve.
