Lemon Glazed Cake

This lemon cake is fluffy and soft, with a rich yellow lemon glaze that gives it a special touch. It is a perfect cake for a birthday or an important celebration.

  • 1 1/4 cups butter, plus one tablespoon for greasing the pan. At room temperature.
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 tablespoon lime zest
  • 2 1/4 cups flour, plus two tablespoons for dusting the pan.
  • 1 tablespoon baking soda
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1 cup cow's milk
  • 1 teaspoon vanilla essence
  • 3/4 cups icing sugar, (for the frosting)
  • 1 egg white, (for the frosting)
  • 1 lemon, (for the frosting)
  • 2 drops red food coloring, (for the frosting)

  • Preheat the oven to 180° C.
  • Grease and flour a cake pan. Set aside.
  • In an electric mixer, cream the butter. Incorporate the sugar, eggs, and zest. Add the dry ingredients alternating with the milk and vanilla, mix until you have a smooth and homogeneous batter.
  • Pour the mixture into the pan and bake for approximately 30 minutes or until a toothpick inserted comes out clean. If not, bake for 10 more minutes. Let cool.
  • For the frosting, in a small bowl mix the powdered sugar with the egg white until you obtain a thick consistency. Gradually add the lemon juice for flavor and the food coloring. Let it rest.
  • Once the cake is cool, unmold and decorate with the lemon glaze. Serve.
